Found mold in juice, poured into drain, whereupon it produced smoke-like fumes?

A thick layer of greyish green mold was growing in a bottle of neglected juice. I poured it out — in order to rinse and recycle the bottle — but once the mold hit the sink drain and water came into contact with it, it began to produce visible fume-like vapors into the air. Has anyone else experienced this fuming effect of mold, and could anyone tell me how toxic it may have been? Is the best thing for mold not to be released at all — i.e., in this case, for me to have thrown out the bottle without re-opening it?

How long would it take a slice of white bread to have visible mold grow on it?

I need to do this for a science fair. I am going to leave a slice of white bread on a plate, and leave it on my kitchen counter, where it is room temperature. Is there a bread that will make visible mold faster than white bread, because I really want to finish my project, and I only have until February 6th to turn it in.
