Does anyone happen to know if mold/mildew can have a sweet odor?

It is probably from the leak, but more like a bacteria growth… You should call some one who is certified to do water damage repair work… Alot of carpet cleaners do this… MAKE SURE WHOEVER DOES THE WORK IS CERTIFIED… Liscensed and BONDED… They will need a contractors liscense as well… If you need to keep costs down, ask if you can do demolition work, and they will take that out of the bill…
